I accidentally made something my kids love. (And I like it too.)

I was experimenting with a recipe to add protein to trail mix, for a healthy trail mix workshop and nutrition chat I’m doing for a local group.

This recipe transpired.

It ended up not being right for the trail mix, but it made awesome, healthy snacks for the kids. I let them taste my first attempt and they ate the entire batch! So I made more, just to have some for later, and they prom...

I have some good news, some bad news, and then some more good news about this recipe.

I tried it for the first time a few weeks ago, and I went ahead and calculated the calories. (For the record, counting calories isn’t something I do all the time. In fact, it’s not something I do most of the time. You can see all the pros and cons of calorie counting here.)

The number I came up with was surprisingly low.

That works great for me and MY current goals...

Taco Tuesday is a real thing at our house.

I’d be happy with a Taco Wednesday, Taco Thursday, Friday, Saturday… you get the picture.

I never get tired of it. So, naturally, I found a way to make a lean meat into a tender, from scratch filling for every Mexican dish possible.

Now I can have it as often as I want, even when I’m trying to be a little more strict with my meals.

Give it a try and let me know what you think!

It isn’t enough to just not overeat.

You also need to make sure you’re getting enough food to keep your body functioning properly, both to lose weight and for good health.

We started the discussion in Part 1 talking about WHAT to eat (start there if you haven’t read it yet). Now let’s move on to figuring out HOW MUCH to eat.

Not Talking About Jimmy

I’m not good at buffets.

I look at most people’s plates and their meals kind of make sense, like a littl...

Dieting for fat loss (or just eating healthy) is a matter of making better decisions on what foods you eat, and how much you have at each meal.

In Part 1 we’ll focus more on the “what.” (Part 2 will discuss “how much.”)

So, how do you decide what foods are best for your diet? It’s easier than you think.

What to Eat

It would be nice if we all had a private chef who lived in our pantry and came out only to prepare meals. (And to use the bathroom. Proba...

Everyone needs a quick throw-together recipe in their back pocket for when life happens.

For me, I have tacos (which I could eat always), and this recipe.

How I Use It

This past week was nuts.

Several activities for the kids, the adults were down with colds, guests coming from out of town, appointments, sessions, and deadlines, oh my.

It was so crazy I didn’t ever get to sit down to plan my meals for the week, so they were all decided on the spur of t...

We’ve all been there. You get home from work late, you’re starving, and there’s no food ready to eat. So you reach for some less than ideal dinner choices:

Fruit snacks, cheerios, an M&M in the couch cushion… whatever you can find.

The only way to avoid those moments is to plan for it.

Meal Plan vs. Meal Strategies

I don’t do meal plans for clients. It doesn’t help them in the long-term.

Instead of telling someone WHAT to eat, I teach them how to do t...

Some recipes are just easy for getting in the right amount of carbs (as well as the other macronutrients).

Like this one, which happens to be a family favorite.

A Family Matter

Several years ago we found out our son was allergic to dairy and eggs. He eventually outgrew it, but we learned a lot in that phase of life about paying even more attention to what we’re eating.

(Preventing a painful, dangerous allergic reaction for your child can be very moti...

There’s a good chance your body is deficient in at least one nutrient, probably more.

Vegetables aren’t the only answer, but since most of us don’t eat enough of them, they’re a major part of the solution.

How you go about preparing them… well there’s a bit of controversy surrounding that, which I’m going to clear up.

Veggie Controversy

Talking about vegetables is right on par with someone telling you the dream they had last night… or watching someon...

Most of us are fully aware pizza isn’t something you should eat all the time. But pizza night isn’t going away anytime soon.

This recipe is a better option than what you’d pick up at a restaurant.

The Problems with Pizza

Pizza is a favorite in our house. In fact, Seth has come a long way from his frozen pizza bachelor days, and he’s now a bit of a pizza snob.

But let’s face it, there are two main problems with almost any kind of pizza:

1. Calories
