I accidentally made something my kids love. (And I like it too.)

I have some good news, some bad news, and then some more good news about this recipe.

I tried it for the first time a few weeks ago, and I went ahead and calculated the calories. (For the record, counting calories isn’t something I do all the time. In fact, it’s not something I do most of the time. You can see all the pros and cons of calorie counting here.)

Taco Tuesday is a real thing at our house.

I’d be happy with a Taco Wednesday, Taco Thursday, Friday, Saturday… you get the picture.

I never get tired of it. So, naturally, I found a way to make a lean meat into a tender, from scratch filling for every Mexican dish possible.

Now I can have it as often as I want, even when I’m trying to be a little more strict with my meals.
